AMCA offers a range of specialized courses, including early childhood education and care, kitchen and hospitality management, and individual support and community services. For those pursuing early childhood education and care, AMCA provides exposure to management and leadership practices to support career advancement. This includes partnerships with prominent institutions such as Bira Bira Early Learning Centre, a leading provider of early childhood education and care services in Melbourne.

In the realm of kitchen and hospitality management, AMCA students delve into Italian cuisine, learning about the tradition and origin of various regional recipes. The college’s cooking classes are meticulously designed to develop expertise in Italian culinary arts. The Advanced Diploma of Hospitality package includes 15 months of full-time* industry placement, while the Diploma of Hospitality package includes 9 months of full-time* industry placement. Similarly, the Certificate IV in Kitchen Management and the Diploma of Early Childhood Education and Care each offer a 6-month full-time* industry placement. These industry placements are often paid.

For those interested in individual support and community services, AMCA provides intended to teach entry-level workers for positions in residential aged care institutions, community care and nursing homes, and disability care facilities. This includes training in areas such as personal support, community care, and client assistance, ensuring graduates are well-prepared for meaningful careers in these sectors. The training includes 350 hours of industry placement (150 hours in the Certificate III and 200 hours in the Diploma).

Students enrolled in these programs can work an average of 24 hours per week during their school term (study in session) starting from July 1, 2023. Additionally, students may work up to 44 hours per week, with 20 hours of that time counting towards their industry placement study. During industry placements, students may also be required to attend tutorial classes, workshops, and complete online assessments. These industry placements can be paid.
